TASTING NOTE

Bright medium red. Beautifully perfumed and ethereal, blue fruits, cranberry, sandalwood and violets. The flavours are vibrant, supple, seamless and with lovely tension.

FOOD RECOMMENDATIONS

Super versatile from seared tuna or salmon, lighter game meats such as pigeon or rabbit, or richer dishes such as classic lamb cuts, roast pork with herbs & fennel, charcuterie, and soft cheeses such as brie.

VINEYARD

The Abbey Vineyard at Tarrawarra is one of the Yarra Valley's premium vineyard sites. It typically produces brooding dark fruited Pinot Noir with power and charm.

SEASON

2020 was a cool late season with timely rain. Near perfect growing conditions, good natural acidity, generous colour and flavour.

TASTING NOTE

WINEMAKING

Hand sorting of fruit to ensure perfect fruit reaches the open fermenter. 18 days of maceration. Matured on fine lees in new and used 500L casks for 9 months. Gravity at all stages.

Alc/Vol: 13.5% pH: 3.65 TA: 6.0g/L

CELLARING

Store in a cool cellar and this wine will develop terrific complexity and interest over 4-6 years.
