Our Fiano is grown at the De Bortoli Shelley’s vineyard on the eastern edge of the Rutherglen region. The site is south east facing and produces Fiano with a tight acid backbone and delicate varietal flavours. The site has an interesting gravel, clay and alluvial soil mix.
2021 was a fantastic year to grow grapes in Rutherglen. After regular rainfall events and a mild summer the grapes have ripened to their ultimate potential. The whites in particular have outstanding flavour intensity.
The colour is Pale Straw with green hues, citus lift with soft hazelnut and dry herb aromas. The palate has beautiful length and structure, soft texture, and nutty, citrus and delicate tropical fruit notes.
Dry White Wine
⅔ of the Fiano was fermented at cool temperatures in stainless steel tanks under conditions to retain maximum fruit flavour and drive. The other ⅓ was fermented in a combination of older French oak hogsheads and puncheons to add complexity and texture. After 2 months on lees the two parcels were blended and prepared for bottling. Stirring and malolactic fermentation was avoided to retain the natural acidity of the wine and so as not to interfere with the wine’s bright zesty fruit profile. The wine was bottled in July 2021
