Opulent layers of stone fruit, citrus zest, honey drenched apricots with hints of nougat and vanilla bean accents from the French oak. A rich texture balanced by sweet fruit and refreshing acidity. WINEMAKINGPatience is the key to making a Botrytis wine, waiting for the grapes to be ready to harvest, fermenting the wine, then maturing in barrel for 12 months. At this time we assess each individual vineyard that has been nurtured through this period and blend the very best components to yield a friendship between fruit and oak, sweetness and acidity. WINE ANALYSISAlc/Vol 10.0%, pH 3.62, & TA 9.4 g/L CELLARINGThis is a wine that can be enjoyed young and will keep evolving over the coming decades.
