VINEYARD

The fruit was grown on our De Bortoli Shelleys Vineyard. As our Vineyards have matured, our canopy and crop management have been finely tuned and our fruit more balanced, resulting in wines that are better structured and more intense in flavour. We have selected ten rows of Durif to produce our Single Vineyard, ultra-premium flagship wine.

SEASON

After a cooler and slightly wetter than average winter, Rutherglen had good growing conditions through spring. The summer was warm and dry with above average temperatures but without any days of extreme heat. This allowed the grapes to develop full flavours and some fantastic depth of colour.

TASTING NOTE

Our Durif has an incredible depth of colour and flavour. Intense varietal plums and spice, chocolate and prunes, mixed fruit spice, licorice, chocolate and cedar from elegant oak enhancement. Although powerful this wine has amazing drinkability and balance which will continue to develop in the bottle. An amazing food wine.

WINEMAKING

Durif fruit has very sturdy skins which are packed full of colour, flavour and tannin. The fruit for this wine was crushed and inoculated with a spicy Rhône yeast. The fruit was fermented in an open vat and a shallow static fermenter, with gentle, hand plunging and pump over regimes. The wine was left on skins for fourteen days to allow the tannins to integrate and soften. At the completion of alcoholic fermentation the wine was pressed to barrel for malolactic fermentation and maturation for sixteen months. The wine was matured in a combination of French oak hogsheads and puncheons, 38% new, 18% one year old, 18% two year old and the rest in three and four year old oak.
