PHI Chardonnay 2021
SUMMARY
PHI is the 21st letter of the Ancient Greek alphabet and symbolises balance, harmony and proportion. In a similar way, the third and fourth generations of the De Bortoli family are working together to create considered Single Vineyard wine that gives proportion to climate, soil and maker.
TASTING NOTE
Complex Chardonnay with mineral, citrus, white flowers and hints of butterscotch. Fine and textural, nutty, creamy and gentle acidity.

Prior to that, the vineyard had been a source of some of our finest Chardonnay for 20 years. One of the most well known and respected vineyards in the upper reaches of the Yarra Valley. WINEMAKING The fruit is hand harvested, whole bunch pressed and allowed to settle overnight. The turbid juice is then racked to older French oak casks where it undergoes natural fermentation. The wine is left on yeast lees for 9 months with the occasional stirring. TASTING NOTEComplex Chardonnay with mineral, citrus, white flowers and hints of butterscotch.
