TASTING NOTE
This dry Chardonnay-based sparkling is showing fresh citrus, brioche yeastiness, hints of hazelnut & a satisfying minerality on the finish. Lovely balance and length.

TASTING NOTEThis dry Chardonnay-based sparkling is showing fresh citrus, brioche yeastiness, hints of hazelnut & a satisfying minerality on the finish. Lovely balance and length. WINEMAKINGFruit is whole bunch pressed directly to cask. The base wines undergo natural fermentation in older casks, full malolactic fermentation and sit on lees until spring. The cuvée is assembled from the two varietal components and tiraged for secondary bottle fermentation. The wine is left to ferment and age on lees for 6 years before hand riddling, disgorging, corking and finishing.
