Food Match | VARIETYShiraz, Durif, Cabernet Sauvignon SEASON2019 saw late spring rains allowing the vines to prosper following a relatively dry winter. Lower than average yields and a significantly earlier harvest allowed for good varietal flavour development and balanced acid. WINEMAKING
Fruit was harvested in the cool of the morning to maximise fruit freshness. Upon reception at the winery, the fruit from each variety of each region kept separate and was carefully destemmed into Potter fermenters where the individual parcels underwent a cool ferment for a total period of 6 to 10 days. Pressed off at dryness, the wine was then put into a selection of new and older American and French hogshead barrels for 12 months. A multi-regional wine that captures the essence of each variety from the regions the fruit is sourced. Spicy Shiraz from Heathcote, the rich Durif from Riverina along with the cool climate Cabernet Sauvignon from the Yarra valley make for a harmonious blend. TASTING NOTEBright red with a garnet hue.
