TASTING NOTE
The mouthfeel is soft and balanced with well ripened dark berry fruits combined with spice and fine grainy Shiraz tannin. The oak is integrated into the wine and completes the front palate of fresh berries, chocolates and spice.

Food Match | WINEMAKER Marc ScalzoVINEYARDOur Shiraz is grown on the De Bortoli Burgoyne and Shelley’s vineyards on the eastern edge of the Rutherglen region. Both sites have an interesting range of aspects from the warmer westerly facing sites to a south facing block. The soils are a range of gravel, clay and alluvial soil mix, resulting in a positive diversity of fruit flavour profiles. SEASONThe start of the growing season held promise with warmer than average temperatures, but small and regular rain meant that growth was even and strong through Spring. In December and January temperatures were significantly higher than average with December being 3.5 degrees and January 5.7 degrees above the long term average. This placed a strain on the vines, but with careful monitoring and irrigation the vines got through the January period with reduced berry size and yields, and in reasonable condition. This careful vineyard management of both vine canopy and irrigation was the key to resulting in a strong year for the Rutherglen reds. WINEMAKINGSelected from some of the most prized Shiraz vineyards on the Estate, the 2019 Shiraz is partially crushed into small, temperature controlled vats. A small percent of the fruit is handpicked and is added to ferment as whole bunches to add freshness. This small amount of stems help give a complex tannin structure. A portion of the fruit is cold soaked prior to alcohol fermentation to keep a bright and vibrant fruit profile. A small percentage of Viognier is added to help lift aromatics and freshness which is evident in this vintage! The wine is aged in French and American oak to give tightness and roundness on the palate whilst helping to give complexity in all areas. WINE ANALYSISAlc/Vol: 14.7%, pH: 3.57, TA: 5.5g/l CELLARINGOur Shiraz is made to cellar. It expresses its drinkability now but will continue to soften over the next 3 - 6 years.
